Hot Sauce Recipe: Thai Chile Jam

Like spicy food? Then I know you love Thai Food.

Thai Chile Jam is a great compliment to classic Thai dishes, such as crispy-fried pork belly – called muu grop in Thailand and it’s also one of my girlfriend’s favorite dishes.

Thai Chile Jam Ingredients

  • 2 Sliced Shallots
  • 4 Split Garlic Cloves
  • 2 Tbsp. Dried Shrimp (available at any Asian grocer)
  • 6 Dried Red De Arbol Chiles
  • 2 Tbsp. Brown Sugar
  • 2 Teaspoons of Thai Fish Sauce
  • 2 Cups of Sunflower Seed Oil

Chile Jam Preparation

  1. Heat up the Sunflower Seed Oil in a wok – medium heat.
  2. Fry the Shallots until browned, then remove from the oil
  3. In the same oil, fry the garlic cloves until lightly colored, then remove them from the oil.
  4. Add shrimp and chiles to the oil for half a minute and then remove them too.
  5. Next, puree all the items in a food processor.
  6. In a saucepan, bring the mixture to a boil, after which you should add some sugar and the fish sauce.
  7. Let the mixture simmer until it thickens

Eat the Jam!

Like I said before, this jam is perfect for fried pieces of meat. Eat it up!
