Thai Chile Jam is a great compliment to classic Thai dishes, such as crispy-fried pork belly – called muu grop in Thailand and it’s also one of my girlfriend’s favorite dishes.
Thai Chile Jam Ingredients
- 2 Sliced Shallots
- 4 Split Garlic Cloves
- 2 Tbsp. Dried Shrimp (available at any Asian grocer)
- 6 Dried Red De Arbol Chiles
- 2 Tbsp. Brown Sugar
- 2 Teaspoons of Thai Fish Sauce
- 2 Cups of Sunflower Seed Oil
Chile Jam Preparation
- Heat up the Sunflower Seed Oil in a wok – medium heat.
- Fry the Shallots until browned, then remove from the oil
- In the same oil, fry the garlic cloves until lightly colored, then remove them from the oil.
- Add shrimp and chiles to the oil for half a minute and then remove them too.
- Next, puree all the items in a food processor.
- In a saucepan, bring the mixture to a boil, after which you should add some sugar and the fish sauce.
- Let the mixture simmer until it thickens
Eat the Jam!
